Vegan Ranch Dressing


  • 1 cup raw cashew

  • 1/2 garlic clove

  • 3/4 cup of water (can add more depending on consistency you like)

  • 1 TB apple cider vinegar

  • 2 TB lemon juice

  • 2 tsp onion powder

  • 1 tsp salt

  • 2 tsp nutritional yeast (optional)

Soak cashews overnight or for a minimum of 4 hours.  Add the cashews to your blender along with garlic, water, apple cider vinegar, lemon juice, onion powder, and salt blend until completely smooth, stopping to scrape the sides as needed. If you'd like additional flavor you can add parsley, chives, dill, or scallions and pulse a few times to incorporate. Store in an air-tight container in the fridge for up to a week. The dressing gets thicker as it cools, and can even be used as a dip.
