Cucumber Dill Salsa
A summertime favorite around here. This cool, crisp dip is sure to take the heat off you on those hot summer days while satisfying your appetite.
Ingredients:

2 medium cucumbers - peeled, seeded, and chopped

2 medium tomatoes, chopped

1/2 cup chopped green bell pepper

1 jalapeno pepper, seeded and minced

1 small onion, chopped

1 clove garlic, minced

2 tablespoons lemon juice

2 teaspoon fresh dill

1/2 teaspoon salt
In a medium bowl, stir together the cucumbers, tomatoes, green pepper, jalapeno pepper, onion, garlic, lemon juice, dill, and salt. Cover and refrigerate for 1 hour. Serve with tortilla chips.
